is a strange line with a lot of 5ths and 3rds being played over the root chords. Just wondering if I should simplify it a bit and/or if anyone here has covered it and what they ended up playing?

Bull crap. What is so hard abut the guitar part? Now if it were the piano player complaining that is another story.
As for the guitarist, maybe if he learned what chord inversion are and for, he’d understand what he is supposed to do. One tip to pass on to the GP, yes a guitar has six strings. It doesn’t mean you need to play all six strings on each chord.
