It's worse than just unexpected. Not that there's been any real character development with her but it wasn't in her character at all. Someone else should've come up behind him with a vase or she could've convinced him there's another way or a dozen other options. What was the point of that character at all? That guy is a legit character actor with a million sci fi credits and at least one star trek roll that I can remember right now at 4:48AM. They made him seem almost kind or sympathetic. Why? So she would have uncontaminated blood to heal her son. The whole thing was just sloppy.
Ha, I was thinking the same thing about the vase on the head scenario, but I'm not sure who we can thank, Seth or the other writers.

I am going with deliberate.I'm trying to decide if it was sloppy writing to have her stab to death that character, or if the writers were purposely adding elements of chaos to the show to distinguish it from other ST franchises.
If the latter, then we should expect similar "shocking" behavior in future episodes.

Other choice would have been to shoot him directly, since she had the gun, instead of risking it in a close range fight. I was surprised at that. And I agree with @Gorn: we were given mixed signals about the guy for no real reason.Stabbed first, non-fatal and he kept coming. No other choice.
