I think you'd enjoy it, for many reasons. :)
 
Did you run both tubes with the same settings? In that, I agree you can hear the difference, but the lower grain tube will sound the same as the higher grain tube if you just push it a little harder, or push the other a little less.
The only setting is the gain knob. On both it was adjusted to read an average LUFS of -15 on my WMS plug-in.

That being said, there's absolutely no way you'll get a 12au7 to break up like a 12ax7 in the same amplifier. I don't care how hard you push it. Now, these are preamp tubes, I haven't been able to do the same experiment with 6l6s and el84s or 6550s.

The Cobalt Flats are surprising if you haven't tried them before. They do not sound like a traditional flat.

It's in part a tactile thing for me too, I have pretty good calouses and enjoy the feeling of Rounds, Flats, not at all.
With the assistance of our good Mr. Ken in guiding me to SITs and Ken Smith, I'm pretty happy with my strings.
