Did you know that canary, as the islands in the Atlantic are called, is not in reference to the small yellow bird or budgie, but rather it references a derivative of canine, or dog. Therefore the translation of the name of the breed would be Dog of Presa Dog. Also Presa is a small village in Slovenia.
Anyway, that's a big dog.
What I learned from a visit to Tenerife last year was that much of the early Spanish emigration to the Americas was of Canarians, and/or went through there, so there is a lot of influence to and from Mexico in their culture, including cuisine.
Also that the two most common sauces they use are called Mojos.
