Often it isn't the notes alone, or at all, that make a recorded guitar solo iconic. Rather, it is the sound.
If you're not a tribute band and the guitarist can do something that fits the song, I don't give a damn. If you want not for note, get an AI robot to play for you.

I'd say any mainstream pop or rock tune recorded between 1980 and 2000. Mostly that was not heady improvisational music and the guitar solos were anthemic, very much part of the song's identity.
You could get in front of an audience and play your own notes in any of those songs because you're nobody's robot and get AI or whatever. If you do that, you won't be showing your audience what they came to see. Go from there.
