What is an iconic guitar solo that should be played note for note?

Honestly, I'm not seeing anything mentioned here that strikes me as holy.

Recuerdos de la Alhambra, maybe. Things like that were written to BE played the same way over and over. That's what classical music IS.

But I can't support the "embedded in amber" approach to African-American improvised music. As Lester Young said, "Why be a repeater pencil?" Yeah, my version might not be as good as "THE" record. But it's mine. At the pay rates I'm pulling down, I'm doing it for the art anyway.

When Taylor Swift's band contractor calls me for a position on her show, yeah, then I'll play the same six note solo night after night - if the pay is as good as I expect it is. Till then, I'm going to stay with the fundamental ethos of African-American improvised music.

And...would THIS be one of them?:
No. I like Lowdown, and had heard it a few times in the last month because I was trying to learn the bass part, but had to listen to it again just now to even remember how the guitar solo goes.

If the solo in a cover version has the same general vibe I doubt most audience members would pick up on any differences. And even if it were deliberately significantly different I think that could work fine and I doubt you'd have people walking out in protest.
