Well, good for her. She is finally at the point in her life when she can say whatever she bloody well wants.
I've been in situations where people told us things like "I liked the Blondie tune" (we did all original music), and have figured out a response that works well for that situation. Though your situation is different, I suggest next time, you try it out:
Her: "This is the wrong music for these people. Everyone hates this music."
You: Thanks!
She may get confused by this, but her showing up to an 80's party, expecting Chopin - she's already confused. Chances are, after your response, she will be taken aback, and pause to collect her thoughts. That's you cue to smile and quickly move away. No matter what her reaction is, it'll probably shorten the exchange, which is good for both you and her - you're not going to ever agree on anything, given her opening salvo, so don't try to engage her further. Be nice, say thanks, and move on.

- She did not have dementia (though I'm not a doctor). She was not confused about what she heard or said. She hated the music.
Agreed, that does happen. But then many old people (not me and I'm 72) feel pretty much free to say whatever they think even absent dementia. Old and set in their ways and ofttimes loudmouthed curmudgeons who voice whatever thought passes through their brains. Which, just like their bodies, don't work so well any longer. Stay flexible in mind and body, you youts.One of the first things to go with dementia is your "filter" - that whole social grace thing where you don't say stuff that you're thinking (because you want to be nice) sometimes goes out the window. With my Mom, that was certainly true at times.
So yeah, she really hated your music, but a decade younger, she probably wouldn't have said it.

I saw Metallica in the 90’s, I think it was the old Arena in Seattle. It would have been the Sandman tour I think. The crowd threw the folding chairs into a giant pile in the middle of the floor, and were climbing them. I made my way down to the floor (from the high up back seats). I tried to make my way to the front, past this giant dude. He grabbed my t-shirt to prevent me going by him, and tore it off instead. He shrugged, and I watched the rest of that chaotic show up front.Into... "CLUTCHING YOUR PILLOW TIYYY-TUH!"

Location: Assisted living facility (parking lot)
You might be able to tell where this is going.
About halfway through our single 90 minute set a literal little old lady (5'0", 85 years old) walks up onto the stage saying something to me that I can't hear because it was mid song. Maybe she was coming to complain about the lack of hair metal, so I leaned over to give her my ear.
Her: "This is the wrong music for these people. Everyone hates this music."
Me (to myself): It's a Billy Idol song. I hate it too.
Me (to her): "It's an 80s party. This is what they hired us to play."
Her: "It sucks!"
Me: "Again, this is what they hired us to play."
Her: "It's sh*t! And you're terrible! I don't listen to this garbage. I listen to Chopin."
Me: "I don't have an orchestra with me. We can't play that tonight."
This wasn't enough of an answer for her. She now had to tell the drummer how much we suck, mid song. He couldn't hear a word she was saying.
At this point a staff member noticed her and retrieved her from the stage.
She had a point. They shouldn't have an 80s party at an assisted living facility until it's my time to live there. They should have had a band playing 50s-70s music. But her complaint should be directed at management, not us.
She was exceptionally rude, but it was entertaining and I get a good story to tell.
Side note: The mini car show included a 60s Batmobile, the Green Arrow's car (does that have a name?), the General Lee and sheriff car, and a DeLorean with all the Back to the Future equipment. (None from the actual shows/movies).
Reminds me of a wedding I played at about 20 odd years ago (we were 4 piece rock covers band)
about 3 songs into the first set an elderly lady with a zimmer frame comes up to lead guitarist and said "I don't like this Jazzy music you're playing".
LG says "we're not a jazz band"
So we continue playing and the lady comes up again and says "You're playing too much Jazzy music - I don't like this Jazzy music"!
LG again tells the lady we're not a jazz band and we're not playing 'jazzy' music
This happened about 3 more times in the first set.... then we had a break.
Bride asked about a song and LG said "Look I don't know who the lady over there in the zimmer frame is, but if she tells us once more to stop playing Jazzy music I'll whack her with my guitar"!
Bride looks over then says "Oh that's my Grandma - don't worry about her she's tone deaf"!
We didn't see the old lady again and even had a request for Rage Against The Machine....
...and you hepcats might be all hopped up on the Mary Jane.If you're old enough, all that new-fangled music is JAZZ, man ...
Maybe there's a rule about here - the more classical the music played at an open event at a car showroom, the less likely you are to able to afford the car....
Then again, if you had Chopin being played at a car show, people would likely be just as confused.
