I’m quite calm, but some things drive me up the &%^$# wall. Editing crap on a tiny screem with a rotary dial is one of them. Especially naming a file for a folder.......scroll all letters.....then #.....then capital letters.....oups....too far, cant go back.....^&%^%^&$$.Those poor walls. Doesn't take much for them to get beaten up.
I think the feature you are referring to is called MIDI Learn or something. I uses to use some IK Multimedia software that did that. You click the function on the screen in learn mode or something and twiddle a knob and presto, that knob is now tied to the function. Really powerful feature that lets you customize your param mappings on a controller.
