Balsamico - A Food Diary

Bacon egg and cheese tacos and a cup of decent coffee.

I'm down with this.
One of the things I miss most from Texas is breakfast tacos. Everything up here is those fluffy breakfast burritos stuffed with all kinds of other junk that they end up weighing a couple pounds.
What's wrong with simple? Chorizo, egg, and cotija wrapped up in a small corn tortilla. I make those at home often. Super simple and the flavors deliver.

Please discuss this ‘artisan’ potato salad.
Well...todays concoction is...
Red skinned potatoes.
Finely chopped onions.
Finely chopped Sweet and Hot pickles...a favorite of mine.
A couple of hard boiled eggs.
An assortment of dried herbs.
Hellman’s Mayo.
Dijon mustard. Yellow mustard.
A dash of balsamic vinegar.
A tablespoon of brown sugar.

Make the “sauce” first...add potatoes.
Chill in refrigerator until cold and the ingredients “come” together.

I just stared the grill and added apple wood for the slow cooking brats.

Really....I try to make all my cooking “artisan”:cool:
Each dish I prepare usually are different from the last time I made it.
This time..after tasting...delish.
I do 99% of the cooking for the wife and myself.

I’m not a chef...I just play one on TV....

I learned much of what I know about cooking from TV chefs. Particularly Bobby Flay, Tyler Florence, Martha Stewart, and Ina Garten.
They are great and all, but I'm certain my father could blow them away in the kitchen for some recipes.
My mother's biscuits and gravy? Forget about it Flay. :)
