So it sounds like the GT1000 is going to process stuff in stereo in the signal chain as it sees fit, some models might not be and some others are and there is no way I can figure out to control any of that in the programming.
Ultimatley the Main out can be summed to mono by using only the Right output and don't try to use headphones at the same time in the left, leave Left unplugged. We can only hope that summing a bunch of stereo signal path to mono will not have phase problems. The SUBOUT, however does not have this summing option.
I thought of the following trick in the signal path to potentially convert the SUBOUT to two mono outputs, not entirely sure if this would work as expected, but please tell me if I'm on the right track to at at least make sure I can get MAIN and SUBOUTS in mono to FOH and to my amp..

So the idea would be use a divider in front of the SUBOUT, in dual mode. I would presume at that point that it will have split the signal into two stereo paths. Then in the mixer use the PAN/LR mode which I *THINK* should send all of the A path to the left side and all of the B path to the right side...essentially summing each of them. Does that make sense or am I missing something?
I would be interested to hear any other suggestions about how to deal with mono in this box...since for live playing, overwhelmingly FOH does not have two channels for bass and nor does my amp. I could have course use only the MAIN out and then a DI to go FOH/AMP...but then I'd lose the cool ability the GT1000 has to provide different levels and even different speaker cabs for MAIN/SUB outs...which is very handy...
