If they start turning red then theyve been ready for a while (and theyre still good).
If they go red you may want to put them in a smoker, with a little patience you will have a chipotle !!

Along with pepper jams, hot sauces, rubs and salsas, I make my own pepper spray. It's pretty bad ass, except if you are down wind.
How do you make the spray? What vessel/expulsion mechanism do you use?

Thai giants are really small, the smallest in that picture is about .5 cm and the largest is about 3cm. They are really good in my dehydrater.
