It's the same 2 band electronics EB has always been using, so it shouldn't sound any different.
The major playability difference should be in the rounder radius neck. And likewise, I feel a finished neck will give a slightly different attack vs an oiled neck. I favor my vintage Ray necks over my newer ones because of both features.
As far as the mutes...of all the old StingRays I've had, the foam material is inconsistant. Sometimes the pads come out thick, sometimes they come out thin, some more dense, some less. I'm sure you'll probably find another Classic that will adjust lower like you want.
