Pizza Toppings

Timely thread! We're playing our annual outdoor show and wood-fired oven pizza cooking party on Aug 16. I came up with this pizza last year and it was delicious.

Tomato sauce and mozzarella, then lightly steamed asparagus, orange bell pepper, dollops of ricotta cheese, and a hard Spanish salami that was cured in red wine. The heat of the pizza oven really softened and opened up the fancy salami, and you have to try the dollops of ricotta on a pizza, simply amazing.
 
Interesting I have not had ricotta on pizza. Sounds like it would be good

Oh man... little blobs of ricotta are unreal. The "Crime Scene" at Pizzeria Luigi here in San Diego (Golden Hill) is just amazing. Ricotta, sliced meatballs, and blobs of sauce on top instead of under the cheese. NY style..

Cracker thin crust with a little red sauce, a little cheese, then some black olives and mushrooms.

I don't mind the kitchen sink pizza, so long as it's not wet, which is basically impossible when you have that much water filled stuff on top of a thickish crust. Same with the all meat version, nothing says eat me like a big disk of grease saturated dough with a bunch of hard black nuggets on top.

I am partial to pepperoni. Fox's Pizza Shops make a pizza with real bacon and it is soooo delicious! However, sausage and Canadian bacon are good too. I like any type of cheese topping as well.
 
I'm not that selective, but peppers and good Italian sausage (common in Chicago but scarce elswhere) from a high temp oven is hard to beat. Substitute bacon (crisp) or meatball for sausage if necessary. You can throw some onion on there, too.

Turnoffs: multiple meats = too greasy, canned mushrooms (slime city.) Barbecue sauce.

I am not picky pretty much any topping I am ok with especially if someone else is buying.

Ever notice when your with a bunch of people ordering pizza you all agree on a few pizzas with toppings have it ready. Then right before you order there's the can we get a cheese pizza guy. Worse they aren't vegetarian they just want cheese and don't want to pick off the toppings. You literally order a pizza just for them. For some reason they always end up with a large pizza.

They don't even say "I like cheese but it's ok I don't want to make you order another pizza" if they said that honestly I would order them a pizza and not have resentment against cheesers.

Bad pizza is still okay. Good pizza is amazing. And great pizza is transcendent.

I love a simple classic margherita pizza, pepperoni, sausage and mushroom or a pesto veggie with some bacon.

One of my more unusual favorites is pear and gorgonzola. Fresh mozzarella, a bosc pear, crumbled gorgonzola or other bleu cheese, olive oil, garlic, chiffonade of basil, spinach leaves and maybe some fresh chives. So good.

My wife was recently diagnosed with Celiacs so it's been a struggle to find a gluten free pizza crust recipe that was at least passable but now we've got one that it really quite good.
