Yesterday I was told I needed to make some baguettes for our AM frozen production team. I asked how many cases and was given a vague/non answer of "20 cases or something. And was told that I would be informed later of the exact number. That never happened. We are making 5 mixes for 1320lbs total. That takes time to get through. We have to divide, proof and bake the **** 2 mixes st a time due to time and space constraints. Now I am text battling the AM supervisor because his team needs the dividing machine before we will be done with it thus pushing back his production. He has been told by the big bosses (read: ass chewed hard) not to rush me. Baking under proofed bread makes for crappy product for a variety of reasons. The best part, I explain the only reason we are pushing them back is because of the production I am running for him. He tells me NOW that they don't need the baguettes yet.
