Used, these are dirt cheap. USB-C adapters are cheap too. Does the iPad have both USB and Fire connector?

No. USB-C only for charging input, audio and video input and output. And your pic there Dave already makes me nervous. I suffered a techno breakdown in 2012 and haven’t wanted to even think about anything tech since. That is one reason I’m not into pedals at all.

I have been trying to decide on a recording rig for what seems like forever. Last time I looked was this time last year. All I want is something with at least one instrument input, a mic input, and usb-c connectivity to my iPad where I’ll rely on Garage Band to start. Where I get confused is powering the device while also charging the iPad. Any ideas what to get that will do that? I’m a former early tech adopter turned Luddite. My motto now is KISS.
I find a tablet doesn’t really lend itself to editing audio. I currently use a PC.
Maybe the interface will charge the iPad through the USB C port?
 
My suggestions:
If you're used to Mac, get one. Load it with a bunch of ram and a Solid State drive. As you know it comes with Garageband, but you might consider Reaper. It's fully functional as a demo, and very reasonable to buy. Reaper is a little more of a pro DAW, while Garageband is easier. Both will yield quality audio.

Focusrite makes high quality interfaces. You can just plug your basses directly into the interface, and that's what I would recommend to start. You probably only need a few inputs. (I like to mutitrack record rehearsals, so I need 8 inputs as a minimum)
The interface will also have balanced line outs to connect to powered monitors. You'll want size those according to the room.
@GBassNorth I have an extra Presonus interface you can try out if you are still heading to this part of the world. You could experiment with it until you decide which direction you want to go with your setup.
