I used to like my steaks very rare, but as I've aged, I've gone to medium rare towards the rare end of the spectrum.

I have to fix T-bones a lot of the time because I split the cuts. Wife likes it medium well. I like it rare. She always wants the filet side. Ugh. I get a tear in my eye every time I cook one.

I fell for fried clams at HoJo's as a kid. HoJo's is gone, but I still like fried clams. They're just difficult to find around here.

There was a HoJo’s in SLO right off the 101 on the south end of town. Near the Madonna Inn. We loved that place when we were kids.

Not a chance in hell. The closest I'd come to that is fried clams. I used to like those-been so long since I've had 'em, I prolly lost my taste for them.

Then both of us a firm no, then. I do like them fried. Rolled less so, but it depends.

In Miami, our band worked in a restaurant/lounge (for 5 1/2 years, btw). They had a very temperamental head chef. If someone ordered a steak well done, he'd look in the meat drawer and pick the least attractive piece of meat saying "why waste a good piece if it's going to be burned to a crisp?".
