By your logic I could argue "So are volume knobs just for people who are too lazy to put their ear closer to the cabinet so they can hear themselves better?"
HPF and LPF are nothing more (or less) than a specific type of EQ, for people who want or need to EQ their tone in that specific way. It has nothing to do with "laziness" and everything to do with achieving the sound in your head. Some people like 31-band graphic EQ, some people like parametric EQ, some people like traditional bass/mid/treble, some people don't use any EQ at all... and some people like HPF or LPF.
What I like about HPF and LPF is that it has a "cutting the crust off the bread" or "trimming the fat from the meat" sound that is difficult to achieve with other types of EQ.
