I almost forgot about quilted ash. It's pretty rare but very beautiful when you have a nicely figured piece.

IIRC I snagged this from Larry @ Gallery Hardwoods back in the summer of 2007 (at least that's what photo album it's in) and had lost track of it in my stash until I moved my shop this summer

My old custom LEJ was my dream top. Don't play 6 string anymore so it had to go. But i do love a nice spalt top.
I've always been particularly fond of a good Goncalo Alves top. It's relatively uncommon, which is a plus, and the nicer stuff has a contrasty brush-stroked look with lots of depth and "movement" that almost looks like tiger's-eye gemstone. It's extremely hard too, so it makes a good tonewood complement for body woods of lesser density like alder.
The most exotic and beautiful top I have owned is on my Sadowsky fretless. I ordered it with a Spalted Maple top. I was not expecting a Flamed Spalted Maple top!

I like the stripey, brush-stroke-like, sapwood, and other broad contrasting wood patterns. Goncalo alves is one of my favorites, as well as some of the more stripey ebony or koa. I just can't dig the spalt, burl, "random chunk spew" woods. I know lots of people love them, so there's something for everybody, but give me the stripes over the spalts any day.
