The bigger advantage to using a pair of 2x10 is when you put your mic on it the FOH sound doesn't need re-EQing nearly as much.
I'd be very surprised if you can't dial in the same amount of warm bottom from a pair of 2x10 that you get from 1x12 + 2x10.
Of course there is the possibility that the particular blend of phasing that you get from those two cabs is what spins your wheels. Then you need two mics and a spare 15 minutes at sound check. Good luck with that.
