My all time favorite guitar solo, across any genre, is Gilmore's on Comfortably Numb. However, since someone mentioned that already I'll go with John Petrucci from Dream Theater. He has a lot of great solos, but my two favorite are:

"Guitar solo" is misnamed ...

It is not like the whole band stops playing and the guitar actually plays all by itself

But rather the guitar departs from playing chords and play a melodic line over top of the rest of the band.

When the bass or drums solo most or all of the other instruments drop out and let them actually "solo"

Love listening to buckethead throw out some sick solos. The one in soothsayer impresses me quite a bit

This bootleg video has one of the most dramatic guitar solos I've heard. The quality of the recording is not great but it is a scorcher and has a very nice build-up and conclusion. Perfectly played and probably totally ad-lib.
