I also want the luthier to make any glue in house, and I want to see dead horses in the workshop.

Are CNC machines themselves made by OTHER, presumably HUGE CNC machines? OR, do they make handmade CNC'd machines, in which case that would allow you more of a 'handmade' claim if your instrument were made on such a machine. Food for thought. Discuss amongst yourselves.
