From a manufacturer's point of view, it's cheaper to put carpet on a product than it is to use the latest polyurea-type coatings.
Carpet usually holds up well and it does protect the wood, but when it gets dirty and worn it doesn't look very good.
The polyurea-type finishes keep moisture away from the wood and look much more professional, plus they can be touched up when needed.

And I'll third it. My rat-covered cab is a NV610. Doesn't get any better than that.
I would never base a purchase on it, but I'm happy with my rat fur covered cabs. I like that I can velcro my always on pedal to the top and also use the velcro cable tidy on my cable to anchor the cable.

Prefer tolex, but rat fur is not a deal breaker. Only thing is, my cats love using my current Rumble 15 as a scratch post. This annoys me.
I actually prefer rat-fur because of the durability. I toured for three years using cabs that were Tolex covered and they were just too easy to tear up, especially if you get "roadie" help from friends. Yeah, the rat fur can get a little frayed looking, but a quick trim with scissors or electric shears puts it back into shape. I'm usually pretty careful with my gear but I don't worry about the rat fur as much as other coverings when under hard use.

My gf's cats love rat fur.
I used to haul my cabs around loose in the bed of a truck, or rammed in a van full of sharp pokey things.
I'd be super cheesed if my nice leather covered cab got gouged, so I don't own anything I have to treat like fine furniture.

I would avoid a new cab covered with it, I prefer Tolex. But I did buy a used BSE115T with like new rat fur.
I don't think the ladies would like to roll around on it for a video, it's too bristly.
Like if you are going to snap your fingers while she rolls around on it, the rat fur would irritate her skin. Tolex would be much better for that.
