To answer your question, yes, they use stage rigs there, and in my case, I was borrowing Cory's (TB:Saluki) Bergantino AE410, driving it with my Markbass F1. But there's also a full PA with subs, so a DI line was also being used. I do play in another church, however, which is smaller, but the same kind of very progressive/contemporary theme, and they do use strictly IEM's/DI on stage (though still a full PA with subs for the FOH). That church uses an Aviom system for stage monitoring, and I have some dual and also now some triple driver IEM's I use there. Oh, and the Sadowsky sounds phenomenal through those, too.
Ya I used to play at the church Vic plays at with the IEM's, but then I moved and had to find a new church. While the IEMs were nice, I totally love the bigger stage where we can run our full rigs with PA support. I leave my AE410 at the church and just bring my M6 when I play. There are typically two guitar players each using Marshall 4x12 cabs and 100 watt heads and pretty loud stage volume. Vic was playing with a single electric guitar player with a Bogner tube amp, which can also get loud.
