Your example is a pretty poor one if you're trying to demonstrate that PC is about liberals whining. It's businesses that started using "Happy Holidays" instead of Merry Christmas, in order to appeal to the maximum number of people without risking offense. Then conservative Christians got their undies in a wad, because how dare Christmas not be recognized every second of the day, in every single public place, from Halloween through December 25th?Tact and common courtesy are one thing, PC-ness is generally about whiney liberals wielding power and liking it.
For example: Christmas
I live in a Muslim country and I have lost count of the people who have wished me a merry Christmas just to be polite and civil and considerate. Also, I would submit that Muslims living in (for example) Britain are not overly bothered by Christmas celebrations (at least the ones I know aren't). The only ones who get their underwear in a wad are the (white English) PC crowd: not because they actually know that some are offended, but because they think that some might be offended but they are not prepared to actually go and find out.
They can't seem to see that just because they hysterically think Andy Pandy is a fascist and the Magic Roundabout denegrates women, then everybody else must have a similarly low tolerance threshold.
Whenever I think of PC, I automatically picture Ric from The Young Ones. Unfortunately, he seems to have multiplied.

I think as soon as a person gets offended by a certain word and tries to stop people from using it, then they've just given it power.
There are some things in this world we spend a lot of time whining about like "oooh, it's a maintenance hole cover, not a manhole cover!" and then there are things we SHOULD be fighting to stop and not enough people do something about it. Like child abuse, or human trafficking, or fighting diseases. How about we stop worrying about "oooh, I'm so offended by what you said" and start saving lives?
If those people REALLY wanted to make this world better, they'd focus on something else. Just my opinion!

Be PC or Non-PC. Just accept the consequences of your choice and we're all good.
