Which do I keep?

In any case, working on the setup for your Pedulla sounds like a great idea. How many different string types have you tried on it so far?
I have had Cobalt Flats, Nickel Rounds, and another set I can’t remember.

Both of those choices (DR Sunbeams in my case) made for a lot of mwah on the fretless I've tried them on. On my other fretless I've only tried Pressurewounds so far, and that bass can transition to no mwah pretty readily, even though it has an epoxied board. Especially if I favor the neck pickup, which I mostly do.

Based on the demos only, I'd go for the Carvin. I understand that Sire cuts through a bit better, and the example you posted was instructions, but I'm confident that an experienced church bass player like yourself can make himself heard on most axes. And there's a supple bottom note that makes the Carvin actually more audible on most demos.
 
Just keep both. Put the one you play the least in the closet (out of sight out of mind:D) and forget about it unless you have no choice, i voted to keep both but like the majority here, if you are determined to shed one, let go of the one you can replace at will if you feel like it down the line.
